Inside Cheeseburgers with Scallion Paste

I was watching a Man v. Food episode where he was eating some of the most amazing looking burgers. I was really intrigued by the cheeseburgers where the cheese is cooked inside the meat so when you bite into it its all melted and yummy.  When I make these again, I'll definitely add more cheese! Oven fries went great with these.

Burger Ingredients
-1 lb ground chuck
-2 tsp Worcestershire sauce
-1/4 tsp salt
-1/4 tsp pepper
- 1/2 cup shredded cheddar cheese

Scallion Paste (adapted from Spicy Scallion Paste)
-2 scallions, thin sliced
-2 tablespoons mayo
-1/4 tsp garlic powder
-1/4 tsp lemon zest
-1/8 tsp salt

1. To make the burgers, combine the ground chuck, salt & pepper, and Worcestershire sauce in a bowl. Mold into patties. Slice off top1/4 of the patty and create an indentation; fill with cheese. Place the section back onto the patty and mold together to seal the edges. Cook burgers on the grill for about 10 minutes, or until meat is cooked to your preference.

2. To make the paste, combine the scallions, mayo, garlic, lemon zest, and salt in a bowl. Mashed paste together using the back of a spoon. Spread on top of burger patty before serving.
