I've never really been a fan of steaks or roasts, so I was a little disappointed when I found out that prime rib was going to be the main dish for Easter dinner. We took some leftovers home and if I was going to have to eat it, I knew I'd have to have some kind of sauce to make it more appealing. I started looking for different recipes and found a few for a Red Wine and Blackberry sauce. After making some modifications, it was DELICIOUS!! This would really go well with any kind of steak. I didn't make the prime rib, so there is no recipe for that.
Ingredients (Adapted from Southern Food)
-1 cup dry red wine
-1/2 cup finely chopped onion
-2 tablespoons butter
-1/2 cup fresh or frozen blackberries (I used fresh)
-1 1/2 tablespoons flour
-2 teaspoons sugar or Slenda
-1/2 teaspoon salt
1.Put blackberries in a food processor or blender and puree. Force the berries through a fine mesh strainer into a bowl, set aside.
2. Melt butter in saucepan over medium heat and add onions, saute about 4 minutes. Add flour and stir to blend, cook another 2 minutes.
3. In a separate pot, heat wine of medium-high heat. Add to onion mixture.
4. Add the blackberry sauce to red wine mixture and cook 3 minutes. Add sugar and salt. Simmer to thinken.
5.Pour sauce through another strainer into bowl to strain onions. Serve sauce over red meat of choice.
