Indoor S'mores

Having a dessert item is pretty much a necessity in our house. When my husband comes home from working late, I know he is going to want some kind of sweet treat, usually chocolatey, to snack on. That doesn't bother me, since I love to bake and at least I know I won't be the only one digging into the brownies or whatever else I have made.

The other night I remembered this awesome recipe for indoor s'mores that I used to make with my family when I lived at home. The funny thing about this recipe, is that it is from a cookbook of Richard Simmons, ya know...the guy with the funny curly hair with all those workout videos? I used to love when we'd make these at home before a movie. I was in charge of making the chocolate mixture, and my little brother would make sure the graham crackers had the marshmallow cream on them. They are so easy to make and something kids will have a fun time making. You no longer need a campfire to enjoy s'mores!

-1/4 cup semi sweet chocolate chips
-3 tablespoons fat-free sweetened condensed milk
-1 tablespoon cocoa powder
-1 tablespoon powdered sugar
-6 whole graham cracker sheets, split into forths
-Marshmallow fluff

1. In a small saucepan over low heat, heat the condensed milk and add the chocolate chips. Stir until chips have melted and a smooth mixture has formed. Remove from heat and stir in the cocoa powder and the powdered sugar. If mixture is too think and clumpy to stir, add a teaspoon of water.

2.On the graham cracker slabs, spread some of the chocolate mixture. Top with about a tablespoon of fluff. Serve open-faced, or top with a graham cracker to form a sandwich. Serve warm or at room temperature.
